Casa Deli was born from one man's 20-year journey through every station of a professional kitchen — and the belief that food can unite cultures and build community. What started in Ixtlilco El Grande, Morelos, Mexico found its home in Minnesota, one dish at a time.

Fernando's climb through every kitchen
Co-founder Fernando Gadea Sánchez arrived in Minnesota in 1998 and started at the bottom — dishwasher, then preparer, then cook, then chef — spending more than 20 years learning the craft from the ground up. As he puts it, "Every step along this path has been a lesson and an opportunity to grow."

Chef Jorge and the flavor of two worlds
Executive Chef Jorge Ariza Peralta grew up in Quebrantadero, Morelos, where his mother's tamale business was his first culinary classroom. A stretch cooking Vietnamese food in Chicago sparked the inventive fusion philosophy that defines Casa Deli's kitchen today.

A menu that celebrates many traditions
Mexican home cooking is the heart of the menu — chilaquiles, birria tacos, breakfast burritos — woven together with American and Mediterranean flavors that reflect the communities Casa Deli serves.
